Copenhagen’s bakery scene has been undergoing a revival, with shiny new bakehouses serving up fluffy cardamom buns and flaky croissants in all shapes and sizes. Ever since moving to Germany 5 years ago, I have become obsessed with bakeries. So I made it my personal mission to find all the best bakeries in Copenhagen. In this guide, I’ll walk you through the 9 essential bakeries in Copenhagen, from classic spots to more contemporary pastry shops. Albatross & Venner
What to Order: Tomato & Bechamel Danish
You can find this exceptional bakery inside Torvehallerne Food Hall. And wow, it is worth a stop! It's concept is a collaboration between the German bakery Albatross (based in Berlin), and specialty Danish grocer Omegn & Venner. This collaboration combines modern techniques and precision from the German mentality with incredible ingredients from the Danish countryside, resulting in the reinvention of classic breads and pastries. Savory pastries are the focus. Think French croissants, Danish rye bread, and Italian pizzette. Don’t worry if you have a sweet tooth. The pain au chocolat is fantastic.

Andersen & Maillard
What to order: cube croissant or espresso croissant
Layers, layers, layers! A love letter to good coffee and pastries, Andersen & Maillard is the brainchild of pro barista Hans Kristian Andersen and former Noma chef Milton Abel. Croissants & layered pastries are their speciality, and the cube croissant has gone mega viral. You’ll want a picture with this Insta-worthy pastry – but then you’ll be dying to dig in. Bite through the layers of its soft, buttery croissant filled with a decadent pistachio ganache. I personally liked their espresso glazed croissant even more. It was a revelation!! With three locations across the city, this Copenhagen bakery has a loyal following so you’ll often find a line of locals waiting for their perfectly laminated croissants and expertly poured flat whites.

Båden
What to order: whatever the daily special is
One of the coziest neighborhood haunts to visit in central Copenhagen is Båden. Built inside an old streetcar train, this feels like one of those hidden local gems. I totally stumbled upon it while biking along the canals, and just knew I had to stop. Mismatched vintage furniture and assorted mixed China set the stage for a quirky but approachable vibe. The baked goods are absolutely delightful and the coffee is strong.

Buka
What to order: strawberry cheesecake croissant
Great for a quick pick-me-up while secondhand shopping in the University District, BUKA has an ideal location in the heart of Copenhagen’s pedestrian shopping area. The massive window case will tempt you with a variety of filled croissants, lemon buns, cinnamon swirls. I ordered a pistachio filled croissant as well as a lemon bun. In my experience, I found the flavors too sweet, and my lemon bun was hopelessly underproofed so it was quite doughy and dense. Not my personal favorite, but you'll find it mentioned on many "Best of" Copenhagen lists.

Hart Bakery Holmen
What to order: cardamom croissant
Stop what you’re doing right now, and pin Hart Bakery to your Copenhagen food map. You NEED to go to this incredible bakery. Opened in 2018, Hart Bageri quickly earned a reputation as one of Copenhagen’s top bakeries. The founder, Richard Hart, earned his chops as the former head baker of San Francisco’s Tartine. Housed in a shipping container style building right on the water, you’ll step into a delicious world of baked treats where every creation is more tempting than the last. Sourdough bread and Danish pastries are the highlights, but there are no bad choices here. We ordered a first round of croissants, and loved them so much, we went back from cinnamon and cardamom buns as round two.

Juno the Bakery
What to Order: Cardamom Buns
Located in the residential Østerbro district, Juno the Bakery is the brainchild of former Noma pastry chef Emil Glaser. And wow, Juno has earned a cult following since it opened its doors. The bakery has a chic industrial vibe that somehow feels relaxed? It is masterful, just like their stunning pastries. There is almost always a line spilling out the door onto their charming patio, but it moves quickly. Once you’re at the pastry case, you’ll notice the selection is kept small with a few seasonal highlights and their signature cardamom buns. Chef Glaser has popularized the traditionally Swedish pastry in Copenhagen. The cardamom buns are fluffy, oozing with cardamom and sugar and – best of all – fresh from the oven. Maybe this is a hot take, but I loved the seasonal apple rhubarb Danish even more!

Kobenhavns Bageri
What to Order: Spandauer
The longtail of Noma’s influence on Copenhagen’s culinary scene continues at Københavns Bageri – it was opened by 2 former Noma bakers. Located in Carlsberg district, the slightly out-of-the-way location is worth a pilgrimage. You’ll smell the rich aroma of sourdough from a block or two away! Københavns Bageri focuses on Danish baking traditions prepared with exceptional craftsmanship. Artisanal loaves are popular here, as well as their Spandauer, a flaky, buttery delight that you’ll want to come back for. I especially enjoyed the cardamom bun here. It is wrapped in a unique shape with exceptional flavor, just the right amount of sugar, and a perfectly proofed fluffy dough.

Perron
What to Order: Sourdough bread
I’m going to tell you right now – the location of Perron bakery is super random. It is inside of BaneGaarden, a modern urban gardening concept on the outskirts of the city center. I drove around the block twice before I realized where I was. But once I stepped inside the airy, modern baking oasis, it was all worth it. Perron crafts the best sourdough bread in all of Copenhagen! I think Perron is a great place to come for brunch, when you can order sandwiches and dishes created with their bread. But their pastry case is still pretty tempting! I thought the croissant was absolutely beautiful. Fluffy, buttery, crispy. All the textures!

Rug Bakery
What to order: almond pain au chocolat
Located inside the swanky five-star Villa Hotel across from Tivoli Gardens, this contemporary bakery updates classic Danish pastries with a modern twist or unique ingredients. Rug, meaning “Rye” in Danish, gives you an idea of what they might serve. From fresh bread to traditional treats, I loved everything here. I still think about the savory mushroom Danish I ate at Rug Bakery. You can even order hot dishes like eggs or porridge. Hotel guests spill into the adjoining café for fluffy French toast and folded eggs drowned in truffle shavings and brown butter.
